Whole Wheat Cinnamon Rolls

I had the chance to get together with some of my girlfriends this weekend and have some girl time. We love to do potluck brunches where everyone brings a little part of the meal. We take turns hosting and the dishes are always different so it is a fun, easy and inexpensive way to get together with friends. This months hostess was also a birthday girl so I told her I would bake whatever she wanted and she chose cinnamon rolls. Boy am I glad she did. The rolls came out great and when I brought home the leftovers even Luke, with his anti-sweet tooth, had seconds.

If you come here often you have probably noticed that my favorite baking ingredients are whole wheat flour and ground flax seed so of course these rolls have both. I know that just because they have these ingredients doesn't make them magically healthy but I figure every little bit counts and besides whole wheat just plain tastes better.

I like to make the rolls the night before and bake them right before we eat them in the morning. To do this I get the rolls into the pan, cover the pan and place it in the refrigerator for the night. In the morning I pull the pan of rolls out and leave in a warm place for about an hour before baking. This recipe makes 16 rolls.

Whole Wheat Cinnamon Rolls




Ingredients
Dough
1 cup milk
3 tablespoons melted butter
1/3 c sugar
1 egg
1 package active dry yeast (2 1/4 teaspoons)
1/2 teaspoon salt
2 cup whole wheat flour
1 1/2 cup white flour
1/4 cup ground flax seed meal

Filling
2 tablespoons melted butter
3/4 cup brown sugar
2 tablespoons cinnamon

Icing
2 tablespoons butter
Dash salt
1 cup confectioners sugar
1/4 teaspoon vanilla extract
1 tablespoon milk


Warm Milk in microwave safe bowl to 120°F to 130°F, or for about 30 to 45 seconds. Pour milk and melted butter into large mixing bowl. Add 1 cup whole wheat flour, sugar, egg, yeast, and salt. Beat on low speed for about 3 minutes, stopping occasionally to scrape down sides of bowl. Add flax seed meal and remaining flour to dough mixture. Beat on low until flour is absorbed and dough is sticky. If dough is too sticky to handle easily, add more flour by tablespoonfuls until dough begins to form ball and pulls away from sides of bowl. If using a stand mixer use dough hook to knead dough for about 6-8 minutes on a medium/slow speed, otherwise lightly flour your work surface and turn dough out onto counter. Knead until dough is smooth and elastic. Form dough into a ball. Lightly oil large bowl. Place dough in bowl, turning to coat. Cover bowl and let dough rise in warm draft-free place until doubled in size, about 2 hours.

While the dough is rising mix brown sugar and cinnamon for the filling in a medium bowl.

Once doubled in size punch down dough. Working on a floured surface roll dough out to a roughly 20x10-inch rectangle. Brush the melted butter over dough, leaving the top 1/2-inch without butter. Sprinkle cinnamon sugar mixture evenly over dough. Starting at 1 long side, roll dough into log, pinching gently to keep it rolled up. With seam side down, cut with sharp knife into 16 equal slices, about 1 1/4-inches wide.

Grease a 9x13 pan. Arrange rolls cut side up, leaving a bit of space between rolls. Cover baking dishes with plastic wrap and let dough rise in warm draft-free place until almost doubled in size, 40 to 45 minutes. If serving the next day arrange rolls in pan, cover with plastic wrap and place in refrigerator. Pan should be removed from the refrigerator about an hour before baking to allow time for rolls to rise.

Bake Rolls on the middle rack of a 375 degree oven. Bake until rolls are lightly golden, about 20 minutes. Remove pan from oven onto wire rack to cool for about 5 minutes.

While rolls are cooling mix powdered sugar, butter, vanilla, and milk in medium bowl. Spread icing on rolls. Rolls are best served warm.

5 Little Things...That Got Me Through The Week

Luke was away on business this last week so here are 5 things that helped get me through the week...

1. Celestial Seasonings India Spiced Chai, just add some milk and I am in heaven. The only thing that would make it better is some Chai Spice Cookies along with my yummy cup of tea.

2. Andrew Bird- NPR, how I love NPR. I had never heard of Andrew Bird until one day World Cafe on NPR introduced me to him. his newest album is perfect for playing over and over. The music sounds so different than other music and off kilter rhythms and unexpected lyrics.

3.
PB&J snack bars. Monkey loves them and they have been a lifesaver snack this week.

4. My latest audio book "read" : Animal, Vegetable, Miracle. I enjoy gardening and hitting the farmers market, and we already try to eat locally when we can so this book has really got me thinking about ways that I can change the way we eat. I would definitely recommend this book.

5. Sunscreen. Lots and lots of sunscreen. With the weather heating up around here and the sprinkler and water table getting lots of attention we seem to be going through tons of sunscreen.

Eden Fantasy's (PG) Review

Bows, Barrettes and Clips, Oh My!

Monkey has a lot of hair...
So of course we have a lot of girly bows, barrettes, headbands, and clips. A lot. So much so that the little tiny drawers in her bathroom were overflowing.

I have mentioned it here before but I am a bit anal. I like things to be organized and in their place. Digging through drawers for a hair accessory to keep Monkey's hair under control and match her outfit was driving me crazy. So I put my thinking cap on and trying to think of a way to hang her barrettes and clips so that I keep them organized without cluttering up the bathroom.

Here is my solution.


I used frames from around the house, colored paper and ribbon that match her bathroom colors. So I didn't even have to spend money to clean up the clutter.

I cut the paper to the size of the glass for each frame. I decided which direction the frame would be hanging and cut ribbon to the correct length. I put two pieces of ribbon in each frame but it depends on the size of the frame and the barrette's and clips that will be hanging in the frame.

Place the frame face down on the table. Lay the ribbons in the frame, parallel to each other and in the direction they will be in the frame. Lay the glass and paper down on the ribbon. Fold the ends of the ribbon and tape it to the back of the paper. Put the back of the frame into place and your barrette frame is ready to hang.

A cute and inexpensive way to organize a little girls bathroom.

3 to 1

A while back I posted about my struggle with negativity and judgment towards people in my life. Thanks to everyone for their positive thoughts and encouragement. It is always nice to know I am not alone, but it also makes me sad that a so many of us have these sorts of struggles.

When I wrote that post I mentioned my feelings of hypocrisy towards a person in my life, what I didn't mention is the slow change that has taken place in me in the last few years that I think has helped my behavior for the worse in this situation.

If you were to ask me a few years ago if the glass is half full or half empty I would have said half full without a thought. That has changed. Lately I am pretty sure I would be more likely to say half empty. It seems it is a lot easier to make judgments about others when you are seeing the world through pessimistic and cynical eyes.

What happened to me?

What happened to my positive attitude?

Honestly, I blame the media. Just kidding. I don't really know where the change came from. Maybe it was just living life a little. I do know that I don't like it. Cynicism doesn't look good on anyone, even me.

After sharing my struggles with you all I started looking within myself for a solution to my judgmental thoughts instead of just focusing on the thoughts themselves. No more wallowing in the knowledge of my struggles, it was time for action.

I thought outnumbering the negative thoughts with positive thoughts might start me down the right track. For every negative thought that creeps into my head about someone, and sometimes places and things, I quickly try to outnumber with three positive thoughts about the same person, place or thing. Yes my solution to negative thoughts is bullying them. A funny thought I know. Three to one, the odds are definitely in favor for the positive thoughts so the negative thoughts generally don't stand a chance.

Unfortunately my negative thoughts are probably not my only struggle worth fighting. One fight at a time though.

We all have our own weak spots worth working on. I can already feel my efforts making a difference but something tells me it will take more than a month to get my brain back on the right track. The positive one.

Lesson learned: Sometimes you have to make yourself see the good.

Silly Runs in My Blood

What do you get when you mix a little bit of this silly, lovable, mushy teddy bear of a dad, *Dad I promise when I say mushy and teddy bear I totally mean strong like bull. Mushy and strong are totally interchangeable, as are teddy bear and bull.

A super silly me, of course!

It is a good thing I married a man who is very also very comfortable with his silly side.
However, it does mean that our daughter doesn't stand a chance. Silly runs in the bloodline after all.

Another Reason Why Summer Reading is SO Great

I signed up for the Adult Summer Reading program at my local library a few weeks back. I did it last year too.

I love to read. But you know what makes me love reading even more?

Prizes! Yep, I am like an 8 year old living in a 25 year olds body. Monkey is signed up for the kids' summer reading program too. I figure we do so much reading everyday anyways. Not only does she get prizes for completing portions of the program but because I am helping her out so much I get entered into drawings for adult type prizes too.

Hurry up and finish that book Monkey, Mommy wants to win!


Don't look at me like that...I would never use reading to my daughter as a ruse to get more chances to win things. Her literacy development is far too important to me. But I wouldn't say no if they library called to tell me I won a gift certificate to a spa just because Monkey did so well in the summer reading program.

Isn't it funny that the library uses prizes to motivate parents to help their children accomplish the different reading tasks? The drawings for the prizes are like carrots dangling in front of the parents to encourage their children to finish. It is the same thing for the adult reading program..."read your books and you might win a gift certificate" says the librarian swinging the carrot back and forth right in front of my nose.

I don't need the carrot, but I sure don't mind it being there.

Signing

We have been signing with Monkey since she was about six or seven months old. I still remember the first time she signed to me. Milk. she was about 10 months old and I cried. I was so proud of her first word.

In the last year or so she has picked up quite a few signs. Animals and foods, people and places, colors and more. I love it and although she has great verbal language skills I still try to encourage her to learn more.

It cracks me up when she gets excited about something and signs while talking without thinking about it. Like the other night while she was running through the fountains in our city's downtown yelling "more water" and "where?" (as in "where did the water go?") and signing more, water and where in her excitement. Or today when asked her if she was hungry and she signed sandwich while emphatically telling me "I need sandwich." Apparently she was famished and knew just what she needed.

We started off teaching Monkey signs that I remembered from the ASL (American Sign Language) class I took in college. Eventually we started looking up words online and supplementing with books and movies too. Whatever your opinion is on babies and toddlers watching TV, I know that Monkey learned new words to communicate with every time she watched a "My Baby Can Talk" or "Signing Time" video. As a result Alex and Leah are up there with Elmo in her mind. They are beyond cool. The kind of cool that requires made up songs like: "Awex and Weah, Awex and Weah, Awex and Weah, Hockins and Weah."

I can't be certain that signing has somehow given her a head start or that her communication skills have been strengthened by signing, but I have a feeling that signing has been nothing but beneficial to her and Luke and I. After all, when your baby can't verbally tell you whats wrong it sure is nice that she can tell you through signs.

PB&J Snack bars

We eat a lot of peanut butter in this house. Natural peanut butter not only tastes great but is also a great source of protein. In my quest for yummy and healthy snacks to pack in lunch boxes and to take on car rides I came up with this delicious snack bar.

PB&J Snack Bars


Ingredients
1/2 cup whole wheat flour
1/4 cup ground flax seed meal
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup natural-style chunky peanut butter
1/3 cup honey
2 large eggs
1/4 cup applesauce
2 teaspoons vanilla extract
2 cups old-fashioned rolled oats
1 cup dried cranberries
1/2 cup coarsely chopped nuts (walnuts, pecans or almonds)
1/2 cup all natural Raspberry or Strawberry fruit spread
1/4 Wheat germ (optional)
1/2 cup puffed rice (optional)


Preheat oven to 350°F (180°C). Grease a 9 x 13-inch baking pan.

Mix the flour,flax seed, cinnamon, baking soda, and salt in a medium bowl. Mix the peanut butter and honey using a stand mixer or large mixing bowl with an electric mixer until blended. Add eggs, applesauce, and vanilla to the peanut butter mixture and mix until well blended and smooth. Add the flour mixture and mix until well incorporated. Mix in oats, dried cranberries, and nuts. Scrape batter into the prepared baking dish.

To spread the mixture evenly in the pan either use a piece of plastic wrap to spread the batter or wet both hands and press mixture using wet bare hands. Using a spatula spread natural fruit spread in an even layer over bar mixture. Sprinkle optional wheat germ and puffed rice over top of fruit spread layer.

Bake the bars 22- 26 minutes or until firm to the touch. Place pan on wire rack to cool. Be sure to cool bars completely in the pan on a rack before cutting into bars.

Makes 24 bars. Bars freeze well.

*I package a weeks worth of bars into separate food containers and freeze. Each week we pull a container out of the freezer to use pack in lunches or throw in my purse for outings with the toddler.

My Pile is a Mile High

An ultimate test of my willpower is having me walk into a bookstore with my wallet.

I love books. Love them.

I love the stories and information that a book can provide.

Even more than that though, I love the way a book feels in my hands. All the thick paper and dark ink, the smooth feel of crisp new pages, not to mention that "new book" smell. It is all a little too much for me to handle sometimes.

I think I could take up residence in a book store. Really. I can walk around bookstores for hours just picking up books touching the pages and looking at the covers, never reading more than the title and the summery. Books are so, beautiful.

My love of books is a great thing for my mind but not such a great thing for my To Do List or my wallet. I would love to buy piles of new books to read. That, however, would get very expensive, very quickly.

Besides the expense I always feel a little guilty after buying a new book. All that paper will just sit on my shelf once I am finished with it, (which is usually within a few days because I am an obsessive reader once I start a book).

It makes me feel so wasteful to buy a book that I will read once. I am not perfectly green, but I try to live life in a way that gives thought to the earth's resources and the guilt bubbles up when I walk out of a bookstore with a new book in hand. Which is one of the reasons I am such a big fan of my local library. All the books you want for free, as long as you return them on time, and when I am done reading each book they go back to their library shelf to await a visit to another persons home.

I mentioned that books are not great for my To Do list because I become totally wrapped up in every book I read and spend every free moment flying through the pages. Thanks to some of the lovely mommies in at Monkey's playgroup I have recently discovered audio books. Now I can listen to books while doing all the boring nagging things on my To Do List, (and you know I totally write a To Do List everyday, right?).

My library even has digital audio books that you plug your head phones into and listen to the book. It's like walking around with a cute little book necklace. I listened to a book the other day while I cleaned my house. I'm in love. Now the only excuses I have for not getting things done is blogging and laziness.

Audio books could never replace books with paper and glue and ink. There are still multiple piles of books on my nightstand just waiting to be read. Maybe someday I will get through them all. But with the way I keep adding new books to the pile probably not.

I know this might just make my piles even higher but, have you read any good books lately?

My Favorite Shade of Gray Day.

I woke up this morning to gray skies and rain. The ground is soaked and the air is cold. Generally that is not what people look forward to waking up to. But, I do.

Sometimes a gray day is just what I need. Looking at the gray outside makes me feel calm, quite and reflective. I think my soul needs that every once and a while.

I like the slow vibe of a gray day. It is almost as if since I can't see the sun I don't feel like I have to race it like a person races the clock to get things done. The wet and the cold make it feel okay to spend the day inside, instead of out and about running from place to place in an effort to get things done. It is like a sort of forced time out from Mother Nature. I think my brain needs that every once and a while.

Besides that, my garden is going to love this nice little soak. Grow veggies, grow!

Why Didn't Anyone Tell Me It Is June?

It always seems like weekends fly by in the summer. There are Bar-B-Ques to attend, graduation parties, farmers markets, yard work and the occasional camping trip.

Camping. Luke's family has a cabin in the mountains a couple of hours from where we live. We love it. usually sometime in April we try to sit down with our calendar and mark out the weekends we are going to try to go up. We do this in April because otherwise our weekends start to fill up leaving almost no time for the required cup of hot chocolate to start the day,
lazy afternoons on the cabins front porch (or inside on the bed),
hikes after breakfast
and hanging out by the fire watching Luke take pictures by moon light after Monkey goes to bed.

Well, I looked at the calender today and it's June. June. Did you know it's June? What happened to May?

Of course we haven't even had the chance to think about going up to that little 100 year old, one room place of ever flowing relaxation. Usually we shoot for once a month. Twice if we can swing it.

So after I got over the shock of seeing "June" instead of "May" I started looking at when we might be able to make it up there.

Wait, this can't be right. Mid-July? The summer is half way over by mid-July. Oh, and mid-July works only if Luke doesn't end up having to travel for work, then it could be the end of July or beginning of August.

Oh, man I am already stressing about the summer going by too fast and technically it has not even started yet.

Maybe if I close my eyes really tight, click my heels together and say there's no place like the cabin, there's no place like relaxation, there's no place like the cabin, I will open my eyes and see something like this...
Well, that didn't work. I'm still sitting at my kitchen table looking out at a backyard full of work to do.
