Bread Challenge Week 17
We love Indian Food. So much so that it’s a life goal for me to learn how to cook Indian food like a pro.
We had Chicken and Tomato Balti for dinner this week and I made a whole wheat unleavened bread to go with our meal, Rotis. The recipe I used came from Betty Crocker’s Indian Home Cooking by Raghaven Iyer. First of all I really like this cookbook for a lot of reasons but probably the biggest reason are all the color photos, additional notes and explanations with each of the recipes. This is really a great book to try out if you are a little unsure of how to cook if even eat Indian food because of all the information Raghaven Iyer shares besides recipes.
This Rotis recipe is simple with only three ingredients in the dough. The recipe makes eight 6-inch round flat breads. The breads have a nice slightly chewy texture that is almost tortilla like. The longest part of the process is cooking the bread which takes about 2-4 minutes per piece, but this can be done while making the rest of your meal since the bread is cooked in a skillet on the stove top.
We really enjoyed this bread and I am actually planning to make it again and try it out as a tortilla substitute for fish tacos in the coming week. The bread is best eaten fresh and warm right from the pan. It can be eaten the next day but it can get very chewy and tough if reheated too long. In addition to Indian foods this bread would be great with chili, huevos rancheros, or as a shell for a sandwich wrap.
