Kid Friendly Lunch: Salmon Quesadilla

The refrigerator was full of leftovers this week so I decided to play with them a little and turn them into something completely different.
On the plate this week:

  • Cold Salmon Quesadilla. Made with cream cheese, shredded leftover salmon and corn between two homemade 6 inch whole wheat tortillas.
  • Kiwi
  • Left over roasted veggies.

    That sounds good. I wonder if Gaige would eat it. Probably, but you never know. His taste seems to vary day to day!

      Maddy usually eats salmon pretty well but she always eats quesadillas like crazy so adding a bit of cream cheese and putting everything between tortillas was perfect.

  3. This looks so YUMMY! I love trying new things especially for lunch because I get so tired of the same old thing. My kids would probably throw it across the room, because they NEVER eat! But I can at least enjoy it :)
