Kid Friendly Lunch – Tuna Salad Pockets

Mini pitas are so fun. They are kid sized and provided a great base for numerous kid friendly lunches. Pitas are easy to make, or I would suggest buying them when they are on sale and freezing them. They freeze well and thaw quickly making for a quick and easy place to start when making a kid (or adult) friendly lunch.

What’s on the plate:

  • Tuna salad with diced onion and tomato stuffed in a whole wheat mini pita with lettuce
  • Strawberries and blueberries
  • Roasted red pepper hummus and veggies
