Bread Challenge Week 34
I was inspired by a friends successful English muffins recently and decided to make some English muffins to accompany breakfast for dinner the other night. Fresh whole wheat English muffins and a couple new types of mini fritattas.
The recipe I found was from Mother Earth News and is a whole wheat recipe. Double score. Have I ever tell you have much I love Mother Earth News? Well, I love Mother Earth News. This recipe was simple to follow and written for my kind of cooking. Sort of laid back and feel your way through it.
I understand that not everyone cooks this way but regardless of the “feel your way through it vibe” the recipe is suitable for average home cooks as well.
It took me about 2 hours and 45 minutes from start to finish to make all 12 of these 3 inch round of deliciousness. The dough did take a while to mix all of the flour in and to knead because it takes some work to knead all of the flour into the dough. I did end up having to bake my English muffins longer than the recipe called for.
Regardless of extra kneading time I’m hooked.
The whole wheat flavor is perfect for toasting. There I go again talking about toasted bread. With peanut butter, honey, agave nectar, jam, yum. Also good as a side with Bacon Avocado and Tomato Mini fritattas and then again with the left over Bacon Avocado and Tomato Mini Fritattas the next day as a breakfast sandwich with Frank’s hot sauce. Yum. Seriously.
I think my days of store bought English muffins are over. Homemade is so. much. better.
