kid friendly sweet potato lunch idea

I think the world of sweet potatoes. I love the color, the taste and the healthiness of them. For Madeline sweet potatoes are hit and miss. One day she likes them and the next she’s not a fan. I think a lot of it has to do with the way I serve them. One way she loves sweet potatoes is wrapped up in a burrito. Especially when she gets to make the burrito herself. Since she is in school she doesn’t get to make her own lunches all that often but when she does she

    Chicken and Spinach Lasagna Rollups

I’m about to lay some truth out for you. Cooking just isn’t as fun any more. Wait, let me back up. Cooking is fun. I love cooking. A five-year-old, a seven-month-old, a tight night time schedule with a small window between school pick-up and bedtime, homework and all the things, just All. The. Things. and I’ve sort of lost that warm and fussy feeling I used to get when it came time to make dinner. I’m working on getting my kitchen-mojo back though. I love cooking and I don’t want life to get in the

    Pasta e Fagioli

We got a bunch of snow in our neck of the woods today. I made one little trip to the post office on the snowy icy roads and decided we would all be staying in our nice cozy home for the rest of the day. Snowy days always get me in the mood to cook, but today I just wasn’t in the mood to make something super time-consuming. That is when the lightbulb came on. Pasta e Fagioli is a go to soup in the Evolving Mommy household because 1. it is quick and easy

    banana pop

It’s hot. Honestly I am kind of a summer time wimp. I don’t really love the heat. Spring and Fall temp are more my thing. You know what makes the heat easy to take? Something delicious and cold to keep me distracted from the melty feeling I experience when I step outside my air conditioned house. In steps Crunchy Banana Pops. Obviously I love the coldness of a frozen banana pop, but I also love the health factor of this frozen treat.  I would have no problem giving Maddy one of these everyday. Actually

    Bugs on a log

In a departure from the usual Thursday kid-friendly lunch idea I thought I would mix it up a bit with a kid-friendly snack. In my house you can’t go wrong with peanut butter. In a twist on the classic ants on a log snack made from peanut butter spread on celery sticks and topped with raisins Maddy and I came up with bugs on a log, peanut butter spread on large pretzel sticks topped with dried cranberries, raisins and sunflower seeds. Mmmm. Mmm. Mmmm. Fun and delicious things happen when you let your imagination run

  • A National Food Day Worth Celebrating

on Mar 5, 11 • in Evolving Kids, Kids in the Kitchen • with 2 Comments

    kids cooking

We all know my stance on food. I like it. A lot. In fact all members of my household like it a lot too. So in general we like National (fill in the blank with a particular food) Days. We especially like National (fill in the blank with a particular food) Days that include restaurants, stores and shops giving out free food. But really how do you celebrate a day like National Pancake Day when you would rather not hang out at a crazy busy IHOP waiting for a table and then waiting for some
