Kid-Friendly Lunch: Breakfast Taco Bar

When crunched for time eggs are my best lunchtime friend. They cook up fast, they are filling and most importantly of all delicious. Oh, and they are versatile. Did I mention the are healthy? Eggs are not just for breakfast either. I’ll stop now you get the point. Scrambled eggs and a few other staples from your kitchen and you have a delicious kid-friendly lunch in just a few minutes.

What’s on the plate: Breakfast Taco Bar

Scrambled eggs
Shredded cheese
Black beans
Whole wheat tortillas (I cut our in half because they were 8 inch size and too big)
Diced tomatoes
Sauteed Swiss chard (could also use spinach or fresh lettuce)
Strawberries and raspberries
Salsa

Delicious food is especially good to little eaters when they get to be in charge of preparing it. This is why a taco bar is a big time kid-friendly lunch winner!

Kid-friendly Lunch: Grilled Almond Butter and Strawberry Sandwich

Everyone has heard of the grilled cheese sandwich. I’d wager that most people have had a grilled cheese sandwich. But what about a grilled almond butter sandwich? Now before I get into he details I must give credit where credit is due. The idea for grilled almond butter sandwiches came from a favorite lunch my grandma used to serve us kids. The grilled peanut butter sandwich. Grandma was on to something amazing. Toasted bread with warm gooey peanut butter. We all loved it. Scratch that we all love it to this day. Even Maddy loves it so I thought why not take a favorite a jazz it up a bit.The result is better than I could have imagined. This is a must make sandwich people. You make it the same as a grilled cheese but instead of sliced cheese in the middle you spread almond butter on both slices of bread and lay out a layer of sliced strawberries on the almond butter layer before sandwiching the bread together and toasting in in a small saute pan. The creamy almond butter, sweet strawberries and whole wheat bread make for a great combination not o mention a healthy lunch.

What’s on the plate: Grilled Almond Butter and Strawberry Sandwich

Whole wheat bread spread with almond butter
Thinly sliced strawberries sandwiched between the bread
Milk

Question of the Week: Pre-Travel Duities

I am heading off to San Diego in coming days to attend BlogHer. Since I have a bit of traveling without Luke and Maddy under my belt I’m wondering how you handle traveling without your family. My pre-travel routine seems to be a changing thing so far this year and to be honest it is a bit of an issue for me. Check out this weeks question.

L is for Leaf. Learning the Upper and Lower Case Letters and Their Sounds.

Armed with her bucket and her snow boots Maddy set off through our neighborhood to find leaves. What three-year-old wants to look for leaves? Well, mine. After I told her how fun and exciting it will be, of course. All the colors scattered around the neighborhood did make our hunt fun and exciting.

“Look Mama, I found a RED one. A really RED one.”

Why search for leaves? L-l-l-l-leaves start with the letter L. I bet you knew that already though. However Maddy did not.

She does now.

Supplies needed for L is if Leaf:

A Marker
Construction paper
Leaves (either real or fake will do)
Glue

Step one: Draw a an upper and lower case L on the construction paper.

Step two: Glue the different leaves onto the upper and lower case L.

Step Three: Admire your l-l-l-lovely l-l-l-leaf filled L’s.

We had a lot of fun trekking around our neighborhood finding leaves, jumping in leaves, and talking about leaves and why they change color. It was a fun time and a good way to learn about the letter L.

EarCheck Middle Ear Monitor Review

When I was a kid I can remember having plenty of ear infections and to this day I know when I am getting sick based on how my ears feel. Luke had so many ear infections as a baby that he had to have tubes put into his ears. So when The makers of EarCheck approached me about reviewing the EarCheck Middle Ear Monitor I thought it sounded like a good thing to try out with Monkey considering her parents ear issues.

Here is the is what the makers of EarCheck have to say. :

EarCheck Middle Ear Monitor is a first-of-its kind, clinically proven and physician-recommended, home- use device that accurately detects middle ear fluid, a key sign of an ear infection. The device helps parents identify when a child might have an ear infection, when it is necessary to seek medical attention and when the fluid is going away or gone.

What Evolving Mommy thinks:

Luckily Monkey has not had any ear infections to date, but I know that just because it has not happened does not mean it will not happen in the future.

After testing out the EarCheck with Monkey I have some thoughts. With one button I can honestly say that the EarCheck was easy to use. The display is easy to read and the results are straight forward and easy to understand, either fluid is unlikely, you should continue to monitor your child or you should consult a doctor. I like that the EarCheck is simple and does not require me as a parent to evaluate more information than I have to. Because we all know that when your child is sick or hurting you don’t have time to chart out numbers and compare graphs.

I was a little worried that it would be hard to keep Monkey still enough to try out the EarCheck, but she thought it was great fun. Mostly because the EarCheck makes a light chirping and beeping sound while it is scanning which she though was very entertaining.

Because we have not had to suffer through the dreaded ear infection yet buying a product like this never crossed my mind. The only worry that I have about the EarCheck is that it is battery operated. I never realized before we had Monkey how many things require batteries.

I do think this product would be a nice addition to any first aide or “sick kit” for your kids, especially if any of your children have trouble with ear aches. Having the EarCheck around would help you evaluate your child’s ear pain and help you decide if a doctors visit is needed and possibly saving you time and money.

My Kid’s a Thief in Training

Monkey has been obsessed with the tree since the moment we put it up. I have told her dozens of times a day to leave the tree alone. So one day I noticed that she had figured out a new plan of attack so that she wasn’t just going at the tree head on in the open. My daughter, at 1 year old, is training herself to be a pickpocket and she is practicing her skills on the tree. Pay attention to when she first opens the curtain…you can totally see her eyes focused on the tree.

Where does she learn this stuff!

I can almost hear her saying “Oh, crap I’ve been seen! I’m just going to close the curtain and stay here for a minute maybe they’ll forget.” Oh no, Baby, mommy has got her eye on you…you little troublemaker! But, after several unsuccessful attempts at pickpocketing the tree she decided to give up.

This isn’t the first time she has done this, I finally got smart and pulled out my camera to record her little “trick.” Usually she makes it out from behind the curtain with at least one ornament if not 2.

World’s Strongest Baby Contest

Monkey is training for the World’s Strongest Baby Contest (you know the one where see who can flip bicycle tires, and push strollers loaded with baby’s the farthest.) This video is from our Sunday morning grocery shopping trip. Monkey decided that she was feeling restless in the cart so Stinky let her stand next to the cart while I looked for a few things and next thing we knew she was off. The funny thing is that barely anyone noticed that a 22lbs 31 inch tall baby was pushing or cart around the store without help. Funny girl!
