The refrigerator was full of leftovers this week so I decided to play with them a little and turn them into something completely different. On the plate this week: Cold Salmon Quesadilla. Made with cream cheese, shredded leftover salmon and corn between two homemade 6 inch whole wheat tortillas. Kiwi Left over roasted veggies.
